Tomato and Roasted Red Capsicum Soup

Ingredients
- Olive Oil for cooking
- Approximately 800g tomatoes, roughly chopped
- 2 red capsicums chopped in half
- 3 cups broth/stock of choice
Instructions
- Place capsicums on baking tray, cover with olive oil and roast until starting to blacken
- Meanwhile cook tomatoes in olive oil until starting to soften
- Add stock
- Simmer for 10-15 minutes
- Add roasted capsicums (chopped up)
- Stir and simmer for a few minutes
- Transfer to blender
- Mix and return to saucepan
- Simmer for a couple of minutes and serve immediately
